Foamed Fruit Cosmos Recipe

Cosmos are becoming a more and more popular drink. They have a well balanced combination of ingredients that helps hide the harshness of the alcohol, resulting in a strong, but not too strong, drink that people with many tastes can enjoy. They are also really easy to make!

I mix it up by making different flavors of cosmo and by adding some flair in the form of a fruit foam. The foam can be made ahead of time and stored in the whipping siphon, and the cosmo base can be pre-mixed, leaving you free during the party to focus on other things.

For the cosmo base, I leave out the fruit juice and then use a lighter foam that will quickly dissolve into the drink. This also allows you to use multiple foams with the same base if you have more than one whipping siphon. I'll often use foams flavored like pineapple, mango, blueberry, pomegranate, and, of course, traditional cranberry.

The recipe below will make enough foam for many cocktails, and the ingredient amounts under "For the Cosmo Base" will make a single cosmo.

Foamed Fruit Cosmos Recipe

Foamed Fruit Cosmos Ingredients

Because they use modernist ingredients, these amounts are given in metric by weight. For more information on how to measure modernist ingredients check out this article.

For the Fruit Foam

400g fresh fruit juice
30g sugar
3.2g gelatin, about 1.75 gelatin sheets, 0.8%

For the Cosmo Base, Per Drink

45g vodka
20g triple sec
7g lime juice

For the Garnish

Fruit foam
Fruit wedge

Foamed Fruit Cosmos Instructions

For the Fruit Foam

Pour the fruit juice into a pot. Place the sugar and gelatin into the pot and let bloom for 5 to 10 minutes. Once bloomed, heat the pot over medium heat while stirring until the gelatin and sugar dissolve. Remove from the heat and pour into a whipping siphon.

Seal the whipping siphon and charge it fully. Place in the refrigerator for at least an hour or two to let the gelatin set completely. The foam can be stored in the refrigerator for several days.

For the Cosmo

Combine the vodka, triple sec, and lime juice in a shaker with ice cubes and shake well. Fill a martini glass with the cosmo base and top with the fruit foam and a fruit wedge.

If making a large quantity, combine the vodka, triple sec and lime juice in a pitcher or large container close to the time of serving and stir to mix well. Pour out enough to fill a glass most of the way and then top with the foam.
